Broccoli and Chicken Pasta Bake

Recipe for Broccoli and Chicken Pasta Bake

Ingredients

  • 3 boneless, skinless chicken breasts
  • Italian seasoning
  • pepper
  • 8 oz. penne pasta
  • 3 cups broccoli florets
  • 1/3 cup flour
  • 3 cups milk
  • 1 1/4 cups grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 heaping tablespoon basil
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 5 garlic cloves, minced
  • 5 mushrooms, sliced and sauted
  • 1 cup shredded mozzarella cheese
  • Italian bread crumbs

Make Ahead Chicken Casserole

A great chicken casserole mixed with delicious vegetables for a healthy make ahead meal.

Recipe for Make Ahead Chicken Casserole

Ingredients

  • 2 cups cooked chicken
  • 1 1/2 cups uncooked macaroni
  • 1 cup cheddar cheese
  • 1 can cream of chicken soup
  • 2 cups milk
  • 1/4 cup green pepper, chopped
  • 1/2 cup celery, finely chopped
  • 1/3 cup onion, chopped
  • 1 teaspoon salt

Instructions

  1. Combine all the ingredients in a 8×12 inch baking dish.
  2. Refrigerate overnight (or make in the morning and refrigerate all day).
  3. Bake at 350 for 1 hour.

Italian Vegetable Soup

Lots of vegetables and wonderful beef flavor make this Italian soup recipe a heart healthy favorite!

Ingredients

  • 1 pound ground beef
  • 1 cup diced onion
  • 1 cup celery
  • 1 cup sliced carrots
  • 2 cloves minced garlic
  • 1 can tomatoes
  • 1 can tomato sauce
  • 1 can kidney beans
  • 2 cups water
  • 5 teaspoons beef bouillon
  • 1 tablespoon parsley
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon sweet basil
  • 1/4 teaspoon black pepper
  • 2 cups shredded cabbage
  • 1 cup fresh or frozen green beans, cut in 1 inch pieces

Spaghetti Pie

A great way to serve spaghetti in one dish! Very delicious!

Recipe for Spaghetti Pie

Ingredients

  • 180 g spaghetti noodles, cooked
  • 2 beaten eggs
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 cups tomato sauce
  • 1 cup grated cheese

Instructions

  1. Cook spaghetti noodles according to package directions.
  2. Add beaten egg.
  3. Stir together until noodles are well coated.
  4. Line the bottoms and sides of a pie pan with noodle mixture.
  5. In a skillet brown ground beef.
  6. Add onion, salt and pepper.

Ingredients

  • 2 cups cottage cheese
  • 3 cups Mozzarella Cheese, divided
  • 1/2 cup Parmesan Cheese, divided
  • 1 egg, beaten
  • 3 cups tomato sauce
  • 1 lb. lean ground beef, browned and drained
  • 1 1/2 cups water
  • 12 Lasagne Noodles, Uncooked

Instructions

  1. Preheat oven to 350°F.
  2. Mix cottage cheese, 1 – 1/2 cups of the mozzarella cheese, 1/4 cup of the Parmesan cheese,and egg until well blended; set aside.
