An awesome recipe for creamy, sweet chocolate fudge! A famous recipe from the Maritime province of Nova Scotia.
Recipe for Theodore’s Famous Chocolate Fudge
Ingredients
- 3 cups brown sugar
- 3/4 cup cocoa
- 1 cup milk
- 1 cup butter (a must!)
- 4 cups icing sugar
Instructions
- In a medium to large saucepan bring brown sugar, cocoa, and milk to a boil.
- Add butter and bring back to the boiling point.
- Boil for 5 minutes or to a softball, stirring constantly. A candy thermometer should read 235° F.
- Remove from heat and add icing sugar.

Recipe for Pumpkin Cream Dessert
Ingredients
Crust
- 1 cup hard margarine
- 3 cups graham cracker crumbs
- 1/2 cup granulated sugar
Filling
- 1/2 oz. Unflavored gelatin powder
- 1 1/2 cups cold water
- 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 28 oz pumpkin puree
- 2 cups whipping cream
Instructions
Crust
- Melt margarine and mix with graham crumbs and sugar.
- Pat into ungreased 9×13 pan. Bake at 350° F for 10 minutes.
- Cool.

Ingredients
- 1 cup butter or margarine
- 1 cup brown sugar, packed
- 1/2 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chocolate chips
Instructions
- In a large mixing bowl, cream butter with both sugars.
- Add egg and vanilla, and beat well.
- Stir in flour, baking soda and salt until well blended.
- Add chocolate chips and stir with a spoon.
