Cinnamon Snap Cookies

If you’re a fan of cinnamon, you’ll love this recipe for cinnamon snaps! They make a great cookie jar cookie and disappear in a hurry!

Recipe for Cinnamon Snap Cookies

Ingredients

  • 3/4 cup margarine
  • 1 cup brown sugar, packed
  • 1 egg
  • 1/4 cup molasses
  • 2 1/4 cup flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • additional sugar for coating

Instructions

  1. In a large mixing bowl, cream shortening and brown sugar.
  2. Add egg and molasses.
  3. In a smaller bowl, combine flour, baking soda, cinnamon and salt. Gradually add to creamed mixture.

S’mores Cookie Sandwiches

Two yummy cookies with a marshmallow sandwiched between! These are great… kids love to make these with help. They love to eat them too. Graham cracker crumbs and chocolate chips added to the dough give these cookies the real s’more flavor!

Ingredients

  • 3/4 cup butter or margarine, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 1/4 cups flour
  • 1 1/4 cups graham cracker crumbs
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cinnamon (optional)

Rainbow Drop Cookies

Recipe for Rainbow Drop Cookies

Ingredients

  • 1 cup softened, hard margarine
  • 4 large eggs
  • 1 teaspoon vanilla
  • 1/2 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 cup mini M&M’s
  • 1 cup quick cooking rolled oats
  • 1 cup chocolate chips
  • 1 cup rice krispies cereal

Directions

  1. Cream together margarine, eggs and vanilla, until smooth.
  2. Add remaining ingredients.
  3. Mix well.

Yellow Sugar Cookies

A traditional sugar cookie recipe which is great for cutting out fun shapes and decorating! Everyone will love these light tasting treats, and enjoy whatever designs are created!

Recipe for Yellow Sugar Cookies

Ingredients

  • 3 cups brown sugar
  • 1/2 cup margarine
  • 3 eggs
  • 1 cup milk
  • 2 teaspoons vanilla
  • 3 teaspoons cream of tartar
  • 3 teaspoons baking soda
  • about 6 cups flour (to make dough soft)

Instructions

  1. Cream sugar and margarine.
  2. Add eggs, milk and vanilla and blend.
  3. Add all the dry ingredients. Mix together.
  4. Roll out on a floured surface.

Jam-Jam Cookies

These jam filled cookies have been tested with time. They have been passed down through many generations. A family favorite!

Recipe for Jam-Jam Cookies

Ingredients:

  • 2 eggs
  • 1 cup brown sugar
  • 1 cup shortening
  • 6 tablespoons syrup
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla
  • 2 teaspoons baking soda
  • 4 1/2 cups flour

Instructions:

  1. Mix sugar and shortening.
  2. Add eggs, syrup, and vanilla.
  3. Add baking soda and flour and stir in.
  4. Add flour and baking soda.
  5. Sprinkle more flour over dough.
  6. Roll out thin (2mm).
  7. Cut out with cookie cutters.
