Recipe for Refrigerator Bran Muffins
Ingredients
- 2 cups boiling water
- 2 cups 100% Bran
- 1 cup margarine, softened
- 2 1/2 cups sugar
- 4 eggs
- 1 1/2 cup raisins (optional)
- 4 cups All-Bran cereal
- 5 cups flour
- 5 teaspoons baking soda
- 1 teaspoon salt
- 4 cups buttermilk
Instructions
- In a small heat resistant bowl, pour boiling water over 100% bran.
- In another bowl, cream together margarine and sugar.
- Add beaten egg and buttermilk.

Recipe for Peaches and Cream Muffins
Ingredients
- 1 egg
- 1/2 cup milk or sour cream
- 1/4 cup vegetable oil
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup peaches, chopped
Instructions
- In a small mixing bowl, beat egg.
- Stir in milk and oil.
- In a large mixing bowl, combine flour, sugar, baking powder and salt.
- Stir into the egg mixture just until moistened.
- Stir in the peaches.

- 1 1/2 cups fresh or frozen berries (blueberries, raspberries, blackberries, or a combination)
Topping
- 1 cup icing sugar mixed with a few drops of water to make a drizzle.

- 4 1/2 cups flour
- 3 cups brown sugar
- 3 teaspoons baking powder

- 2 teaspoons cinnamon
Wet Ingredients
- 1 cup oil
- 3 tablespoons vinegar
- 1 28 oz. can crushed pineapple, with juice
- 2 carrots, shredded
- 2 cups warm water
Instructions
- In large bowl, mix together dry ingredients.
- In smaller bowl, mix together wet ingredients and pour into dry ingredients.
