Refrigerator Bran Muffins

Healthy, moist muffins make a great breakfast or afternoon snack. Refrigerate the batter and have fresh muffins daily!

Recipe for Refrigerator Bran Muffins

Ingredients

  • 2 cups boiling water
  • 2 cups 100% Bran
  • 1 cup margarine, softened
  • 2 1/2 cups sugar
  • 4 eggs
  • 1 1/2 cup raisins (optional)
  • 4 cups All-Bran cereal
  • 5 cups flour
  • 5 teaspoons baking soda
  • 1 teaspoon salt
  • 4 cups buttermilk

Instructions

  1. In a small heat resistant bowl, pour boiling water over 100% bran.
  2. In another bowl, cream together margarine and sugar.
  3. Add beaten egg and buttermilk.

Peaches and Cream Muffins

Recipe for Peaches and Cream Muffins

Ingredients

  • 1 egg
  • 1/2 cup milk or sour cream
  • 1/4 cup vegetable oil
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup peaches, chopped

Instructions

  1. In a small mixing bowl, beat egg.
  2. Stir in milk and oil.
  3. In a large mixing bowl, combine flour, sugar, baking powder and salt.
  4. Stir into the egg mixture just until moistened.
  5. Stir in the peaches.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups fresh or frozen berries (blueberries, raspberries, blackberries, or a combination)
  • Topping

  • 1 cup icing sugar mixed with a few drops of water to make a drizzle.

Ingredients

Dry Ingredients

  • 4 1/2 cups flour
  • 3 cups brown sugar
  • 3 teaspoons baking powder
  • 3 teaspoons baking soda
  • 2 teaspoons cinnamon

Wet Ingredients

  • 1 cup oil
  • 3 tablespoons vinegar
  • 1 28 oz. can crushed pineapple, with juice
  • 2 carrots, shredded
  • 2 cups warm water

Instructions

  1. In large bowl, mix together dry ingredients.
  2. In smaller bowl, mix together wet ingredients and pour into dry ingredients.

Ingredients

  • 2 cups whole wheat flour
  • 2 cups white flour
  • 4 teaspoons baking soda
  • 4 teaspoons baking powder
  • 3 cups raisins
  • 3 3/4 cups milk
  • 4 tablespoons vinegar
  • 4 cups wheat bran
  • 1 1/3 cups olive oil OR canola oil
  • 3/4 cup molasses
  • 4 eggs
  • 1/2 cup honey OR 1 cup brown sugar

Instructions

  1. Mix flours, baking soda, baking powder, and raisins in a large bowl.
