This meatloaf topped with bacon is elegant enough to serve as a special dinner. Very moist, tasty and attractive!
Recipe for Danish Meatloaf
Ingredients
- 2 lbs ground beef
- 3 eggs
- 2 cups bread crumbs
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 1/2 teaspoons minced onion or 1/2 teaspoon onion powder
- 1 lb package bacon
- 1 cup cream
Instructions
- Mix together first six ingredients.
- Place into a baking dish and shape into an oblong loaf.
- Now cover the loaf with strips of bacon, overlapping them to completely cover the loaf.

This cheesy, creamy hash brown dish has been a family favourite for more than twenty years and is great for brunch or as a side dish for dinner. It is so easy to make and always such a hit!
Recipe for Heavenly Hash Brown Bake
Ingredients
- 1 bag (2 lbs.)ranch style frozen hash browns
- 2 – 10 oz cans Campbells mushroom soup
- 2 cups (500 ml) sour cream
- 2 cups grated cheddar cheese
- 1/4 – 1/2 cup finely chopped or grated onion
- Parmesan cheese, for garnish (optional)
Instructions
- Preheat oven to 350° F.
- Mix all ingredients together very well and put into a 9 x 13 inch pan.
- Sprinkle Parmesan cheese over top.
- Bake in preheated oven for 45 minutes to 1 hour, or until lightly browned and sides are bubbling.

Recipe for No Bake Cherry Cheesecake
Ingredients
Bottom Layer
- 2 cups graham cracker crumbs
- 1/2 cup margarine, melted
- 2 tablespoons brown sugar
Cream Cheese Layer
- 2 cups (500ml) whipping cream
- 1 – 250 gram package cream cheese, softened
Topping
- 20 ounce can cherry pie fillling
Instructions
- Combine first three ingredients well and press into the bottom of a 9×13 inch pan.
- Whip whipping cream until peaks form.
- Add softened cream cheese and whip until smooth.

Recipe for Theodore’s Famous Chocolate Fudge
Ingredients
- 3 cups brown sugar
- 3/4 cup cocoa
- 1 cup milk
- 1 cup butter (a must!)
- 4 cups icing sugar
Instructions
- In a medium to large saucepan bring brown sugar, cocoa, and milk to a boil.
- Add butter and bring back to the boiling point.
- Boil for 5 minutes or to a softball, stirring constantly. A candy thermometer should read 235° F.
- Remove from heat and add icing sugar.

Recipe for Lazy Chicken Parmesan
Ingredients
- 1 1/2 lbs. boneless, skinless chicken breast, diced
- 2 teaspoon dried basil
- salt and pepper to taste
- 2 cloves garlic, minced
- 1 cup mozzarella, grated
- 1 – 14 1/2 oz. can diced tomatoes, undrained
- 1 – 6 oz. package chicken stuffing mix
- 1/2 cup water
- 1/4 cup Parmesan cheese
Instructions
- Heat oven to 400° F
- Toss diced chicken with basil, salt and pepper.
- Layer chicken, and cheese in a 9×13 inch baking dish.
