Mocha Ice Cream Cake

Cold and creamy with a little crunch, this recipe for ice cream cake compares to any store bought variety and gives your budget a break!

Recipe for Mocha Ice Cream Cake

Ingredients

    Base

  • 1 cup chocolate chips
  • 2 tablespoons margarine
  • 3 cups rice crispies
    • Middle

    • 2 litres ice cream of your choice
      Topping

    • 1 cup whipping cream
    • 2 teaspoons instant coffee
    • 3 tablespoons instant chocolate milk powder

    Instructions

    1. In a large microwavable dish melt together chocolate chips and margarine.
    2. Microwave at 30 second intervals until melted, stirring each time.
    3. Add rice crispies.
    4. Spread and flatten in the bottom of a greased 9×13 inch pan.
    5. Put in freezer to cool.
    6. Take out ice cream to allow time to soften.
    7. Meanwhile in another bowl, use and electric mixer to beat together whipping cream, instant coffee grounds and chocolate powder until stiff.
    8. Take rice crispy base out of freezer.
    9. Spread softened ice cream over rice crispy base.
    10. Top with whipped cream mixture and spread evenly.
    11. Garnish if desired.

    Change It Up!

    • Omit instant coffee grounds if the mocha flavour just isn’t your thing.
