Oriental Broccoli Slaw Salad

Oriental broccoli slaw salad is a wonderful combination of shredded broccoli stalks, ramen noodles, almonds and sunflower seeds, tossed with a zesty vinaigrette dressing. You can shred your own broccoli stalks, or buy the prepackaged, shredded broccoli stalks which are usually mixed with a bit of purple cabbage and shredded carrot.

Recipe for Broccoli Slaw Salad

Ingredients

    Salad

  • 2 packages ramen noodles
  • 1/2 cup sliced almonds
  • 1/2 cup sunflower seeds
  • 1/4 cup olive oil
  • 1 – 340 gram package broccoli slaw (equals 6 cups peeled,shredded broccoli stalks, 1 medium sized shredded carrot and 1 cup shredded purple cabbage)
    Dressing

  • 2 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • 1 tablespoon soya sauce
  • 1/3 cup sugar

Instructions

  1. Preheat oven to 425° F.
  2. In a large bowl combine noodles, almonds, and sunflower seeds.
  3. Add olive oil and mix until coated.
  4. Spread evenly onto a cookie sheet and place in oven.
  5. Toast for 4 minutes or until mixture is golden.
  6. Remove from oven and cool.
  7. Meanwhile, stir together ingredients for dressing – vinegar, oil, soya sauce and sugar.
  8. In a large bowl combine broccoli slaw and toasted mixture.
  9. Pour dressing over salad and toss to coat.
