Oriental Broccoli Slaw Salad

Oriental broccoli slaw salad is a wonderful combination of shredded broccoli stalks, ramen noodles, almonds and sunflower seeds, tossed with a zesty vinaigrette dressing. You can shred your own broccoli stalks, or buy the prepackaged, shredded broccoli stalks which are usually mixed with a bit of purple cabbage and shredded carrot.
Recipe for Broccoli Slaw Salad
Ingredients
Salad
- 2 packages ramen noodles
- 1/2 cup sliced almonds
- 1/2 cup sunflower seeds
- 1/4 cup olive oil
- 1 – 340 gram package broccoli slaw (equals 6 cups peeled,shredded broccoli stalks, 1 medium sized shredded carrot and 1 cup shredded purple cabbage)
Dressing
- 2 tablespoons red wine vinegar
- 1/3 cup olive oil
- 1 tablespoon soya sauce
- 1/3 cup sugar
Instructions
- Preheat oven to 425° F.
- In a large bowl combine noodles, almonds, and sunflower seeds.
- Add olive oil and mix until coated.
- Spread evenly onto a cookie sheet and place in oven.
- Toast for 4 minutes or until mixture is golden.
- Remove from oven and cool.
- Meanwhile, stir together ingredients for dressing – vinegar, oil, soya sauce and sugar.
- In a large bowl combine broccoli slaw and toasted mixture.
- Pour dressing over salad and toss to coat.
